Warm Apple Walnut Breakfast

Comfort food for mornings on the water. Doubled recipe and topped with yogurt.
Planning on spring cruising in the next month or so? Or heading north this summer to cooler climates? This protein packed breakfast can be made the day before and stored in the fridge, then popped in the oven to bake while you put on the coffee and get underway. And it can be made in one bowl.

It’s comfort food the crew will love, and you can make endless adaptations to suit your boatload!

The captain aboard Silom loves being offered a steaming bowl of this aromatic and delicious breakfast in the cockpit.

The recipe below serves two, but I generally double it since I am a fan of leftovers.

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs, beaten
  • ½ cup either almond flour or rolled oats (rolled oats is a heartier texture)
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2-3 tbsp honey or maple syrup
  • ½ tsp baking powder
  • 1 apple, finely chopped
  • ¼ cup walnuts, crumbled

Mix everything, but the walnuts, in a bowl and combine well. Pour into a greased pie plate, loaf pan or other oven-proof flat dish. Sprinkle on the walnuts. Bake at 350 degrees for 35 to 40 minutes, or until the centre is set.

Options: add ½ cup apple sauce to the mixture. Top with raisins, berries or granola before serving. Serve with a dollop of vanilla yogurt, or plain yogurt with a drizzle of maple syrup. For a more custard-like smooth texture, the mixture can be blended before pouring in the pan.

Best served warm, but any leftovers are still very good cold the next day.
